Reed Hospitality is very excited to be working with a Private Member's Club in the heart of London, looking to recruit for a Sous Chef Key Responsibilities Oversee the kitchen operations and maintain high standards in the absence of the Head Chef. Ensure all food preparation and cooking across sections follow established recipes and methods. Guarantee that all dishes are properly presented before being served in the club. Align food production levels with the number of guests being catered for. Taste all "mise en place" during preparation and verify the flavour and accuracy of all dishes. Consistently apply portion control policies and plating standards. Maintain a clean, organized kitchen environment in accordance with hygiene standards. Ensure proper handling and maintenance of all kitchen equipment and utensils. Store "mise en place" and food items correctly, with accurate labelling of preparation and use-by dates, in line with food safety protocols. Confirm the kitchen is adequately stocked with equipment and utensils to meet operational needs. Regularly sample food to monitor preparation quality and ensure compliance with statutory temperature requirements. Contribute menu ideas to support planning and innovation.
