Sous Chef -Portobello, Edinburgh Xpress Recruitment are delighted to be working with our client to find their next talented and passionate Sous Chef to join the leadership team at their venue in Portobello. This is a hands-on role for a chef who loves cooking, thrives in a team environment, and is ready to take the next step in their career. You'll work closely with the Head Chef to lead day-to-day operations, maintain high standards, and contribute to an exciting, ever-evolving menu that reflects both flair and consistency. What You'll Be Doing Acting as the bridge between the Head Chef and kitchen team, helping maintain a smooth, well-organised service. Supporting junior chefs, guiding their development and ensuring food is consistently prepared to spec. Taking the lead on shifts when the Head Chef is off, managing kitchen operations, labour, and rotas in collaboration with the front-of-house team. Assisting with menu planning, special development, and maintaining accurate recipe and spec files. Upholding food safety, hygiene, allergen documentation, and daily record-keeping in line with company and legal standards. Helping with procurement, stock rotation, stocktaking, and minimising waste. Continuously developing your own leadership and culinary skills in a collaborative environment. We're Looking For Someone Who Has solid experience in a busy kitchen environment, ideally as a Senior CDP or Sous Chef. Demonstrates excellent organisational and communication skills. Leads by example, with high standards in cleanliness, food quality, and professionalism. Understands cost control, labour planning, and stock management. Is confident with food safety systems (e.g. HACCP/Cooksafe) and allergen protocols. Loves developing both food and people - and is full of ideas. Why Join Us?
