The Opportunity William IV is one of East Londons most exciting independent dining destinations and this is a rare chance to join us at a pivotal moment in our growth. Were looking for a Sous Chef who is serious about their craft. Someone who wants to work with exceptional British produce, develop real skills in butchery and seafood, and be part of a kitchen with genuine ambitions. We are actively pursuing further recognition, and the right person will play a central role in getting us there. This isnt a job for someone who wants to stand still. Its a role for a chef who wants to grow, contribute, and be part of something being built from the ground up. The Kitchen & The Food Our cooking is ingredient-led and produce-driven. We work with some of the finest suppliers in the country: Day-boat fish sourced directly from Brixham market via Flying Fish Seafoods prepared on-site from whole fish, gutting to filleting Heritage meats from Swaledale Butchers in the Yorkshire Dales rare breed, nose-to-tail, the same supplier used by many of Londons top restaurants. We do significant butchery on-site and this is a real area of skill development Seasonal British produce at its best, cooked with classical technique and modern sensibility In November 2024, we launched The Dining Room an intimate first-floor restaurant offering an elevated menu. Since opening, it has attracted significant press attention and industry recognition, including being named #4 Best Sunday Roast in London by Time Out and featuring across multiple Best Gastropubs in London lists. You will have genuine input on dishes and menus. This is a kitchen where your ideas matter. The Role Reporting to the Head Chef, you will: Lead and support the kitchen team day-to-day, deputising in the Head Chefs absence Maintain and develop the highest standards of food quality, consistency, and preparation Mentor and develop junior chefs, fostering a culture of learning and craft Oversee mise en place, service flow, and kitchen organisation Contribute to menu development across both the pub and The Dining Room Uphold HACCP, food safety, and hygiene standards About You Minimum 1 year at Sous Chef or Junior Sous Chef level Background in fine dining or quality gastropub kitchens Strong classical technique and a genuine knowledge of British cuisine A passion for provenance, produce, and cooking with integrity Composed under pressure, with natural leadership qualities Experience with seafood and butchery is a bonus, not a barrier What We Offer £40,000£47,000 OTE base salary of £17£18/hour plus service charge of £2.50£5/hour, distributed equally across the team Capped 40-hour contract opportunity to work more hours if desired, but not expected Private healthcare for all staff 30 days holiday per year Free staff meals on every shift 30% discount on food and drink when off duty £100 bar tab on your birthday Ethical workplace pension Ongoing training, development, and genuine progression opportunities About William IV & Breaking Glass Bars William IV is a beautifully restored pub with nearly 200 years of history, reopened in September 2023 and already firmly established as a destination in Hoxton and beyond.
