The Fox & Goose Inn is an independent country pub, restaurant and hotel nestled at the foot of Brent Knoll in the heart of Somerset. With roots going back centuries, we are a much-loved part of the local community a place where guests come to relax, eat well and feel at home.
Our kitchen is built around honest, home-cooked food made on site using quality, locally sourced ingredients. Our menus change with the seasons and range from classic pub favourites to more considered dishes, served across breakfast, lunch and dinner seven days a week, alongside Sunday lunches, private dining and events.
We are looking for an experienced and passionate Sous Chef to join our kitchen team. Working closely with the Head Chef, you will play a key role in the day-to-day running of the kitchen, helping to maintain our high standards of food quality and consistency across all services.
This is a hands-on role in a busy, multi-service kitchen. You will lead the brigade in the Head Chefs absence and be an important part of maintaining the warm, professional culture that makes The Fox & Goose a great place to work.
Assist the Head Chef in the smooth and efficient running of all kitchen services, including breakfast, lunch, dinner, Sunday lunch and events
Lead the kitchen team confidently in the Head Chefs absence, ensuring service runs to the same standard
Prepare, cook and present dishes to a consistently high standard across all sections
Oversee and contribute to the production of our seasonal menus, including starters, mains, desserts and pub classics
Ensure all dishes leaving the kitchen meet our quality, presentation and portion standards
Team Leadership
Supervise, support and motivate junior kitchen staff during service and prep
Assist in the training and development of the wider kitchen team
Help to foster a positive, respectful and professional kitchen environment
Lead by example, demonstrating good technique and a strong work ethic at all times
Standards & Compliance
Maintain strict food hygiene and safety standards in line with current legislation
Ensure all allergen procedures are followed correctly this is especially important given the breadth of dietary requirements we cater for
Assist with stock management, ordering and minimising wastage
Monitor fridge and storage temperatures, cleanliness and general kitchen organisation
Support the implementation of any new processes or procedural improvements introduced by management
What we are looking for:
Proven experience as a Sous Chef or strong Chef de Partie in a busy kitchen environment
A genuine passion for good, well-made food using quality ingredients
Solid technical cookery skills across a range of cooking methods and styles
Ability to work effectively under pressure during busy service periods
Strong understanding of food hygiene, safety and allergen regulations
Good communication skills and a positive, team-focused attitude
Reliable, organised and able to manage priorities across a varied service day
