Responsibilities * Running all aspects of kitchen operation in the Head Chef's absence. * Training and motivating your staff. * Keeping up to date with food safety legislation, liaising with the authorities and taking overall legal responsibility for the premises. * Enforcing health and safety rules. * Supervising all food preparation and presentation to ensure quality and restaurant standards. * Managing stock and product ordering, maintaining detailed records and minimising waste. Requirements: * Proven experience as Sous Chef * Exceptional proven ability of kitchen management * Ability in dividing responsibilities and monitoring progress * Outstanding communication and leadership skills * Good understanding of useful computer programs (restaurant management software, POS) * Exceptional understanding of hygiene and safety requirements and systems. * Credentials in health and safety training.
