ABOUT MITSU Launching in March 2026 at Aethos London Shoreditch, Mitsu brings the spirit of Tokyos neighborhood izakaya to East London. Blending authentic Japanese techniques with British produce and Shoreditch energy, Mitsu is a premium yet approachable Japanese restaurant and bar. From robata grilling and kamameshi rice to DJ-led late nights and zero-waste philosophy, Mitsu is designed to be social, soulful, and unforgettable. This is not a polished, corporate dining room. Mitsu has personality, warmth, and rhythm in an all-day-to-late-night place where locals, hotel guests, creatives, and friends gather. ROLE PURPOSE The Senior Sous Chef is a key leadership role within the Mitsu kitchen team, working closely with the Head Chef to bring the Mitsu vision to life every day and every service. This role balances hands-on cooking excellence, team leadership, and operational discipline, while protecting the soul and standards of the brand. You will be a visible presence in the kitchen, calm under pressure, generous with knowledge, and deeply committed to quality, consistency, and culture. KEY RESPONSIBILITIES Responsibilities may include, but are not limited to: Kitchen Leadership & Culture Lead by example on the pass and the floor, setting the tone for professionalism, respect, and energy Support the Head Chef in building, training, and motivating a high-performing BOH team Foster a kitchen culture rooted in discipline, collaboration, and pride not ego Coach junior chefs, supporting skills development and career progression Food & Execution Deliver consistently exceptional food that reflects Japanese techniques, seasonality, and Mitsus creative identity Take ownership of sections and services, ensuring precision, pace, and presentation Maintain excellence across robata, hot kitchen, prep, and service execution Uphold Mitsus zero-waste and sustainability philosophy in daily kitchen practices Operations & Standards Support menu development, tastings, and ongoing refinement with the Head Chef Ensure full compliance with food safety, hygiene, and health & safety standards Assist with stock control, ordering, GP management, and waste monitoring Step in confidently to lead the kitchen in the Head Chefs absence Collaboration Work closely with FOH to ensure seamless service, especially during high-energy late-night periods Contribute positively to the wider Aethos London Shoreditch culture and community Candidate Profile Knowledge, Skills & Experience Proven experience as a Senior Sous Chef ready for the next step as a HC Strong grounding in Japanese cuisine or deep respect and curiosity for Japanese techniques (training provided where needed) Calm, structured, and organised, even during busy, DJ-led late-night services A natural leader who earns respect through consistency and integrity Passionate about food, people, and creating memorable guest experiences Aligned with Mitsus values: authenticity, warmth, creativity, and sustainability Employment Type Full-time Flexibility to work evenings, weekends, and public holidays
