Our client is an exciting newly opened Seafood Restaurant in the heart of Mayfair, offering a refined yet contemporary dining experience. The restaurant showcases the best of seasonal seafood and produce, drawing inspiration from both British and Mediterranean traditions. Spread across multiple stylish dining areas, guests can enjoy everything from freshly shucked oysters and grilled specialities to cocktails on a chic terrace. With over 160 covers, it combines the buzz of a destination restaurant with the intimacy of a high-end private members' space.
The Opportunity
We're seeking an accomplished Senior Sous Chef to join the leadership team and bring creative energy & high standards to this exceptional culinary offering. This is a chance to work in a superb back of house, crafting bold, seasonal dishes, helping drive innovation, and ensuring consistent quality at every service.
Key Responsibilities
Assist the Head Chef in managing the kitchen and delivering high-quality, innovative food.
Maintain consistency in dish presentation, taste, and timing.
Manage kitchen costs: GP, wages, ordering, inventory, etc.
Oversee staff: rostering, training, mentoring, ensuring high morale and teamwork.
Ensure compliance with health, safety, hygiene, and food regulations.
What We're Looking For
Substantial prior experience as a Senior Sous Chef or Head Chef in a high-quality, high-volume restaurant.
Creative, with a strong eye for detail; excellent sense of flavour, seasonality & presentation.
Proven ability in managing costs, ordering systems, rota / scheduling software.
Strong leadership skills: training, motivating, bringing out the best in a kitchen brigade.
Organised and structured approach; able to maintain high standards under pressure.
