Scope & Purpose of the Role: We are seeking an experienced and dynamic Brasserie, Terrace & Conservatory Bar Manager to lead and oversee our high-end dining and beverage outlets. This role requires strong leadership, attention to detail, and a commitment to delivering exceptional guest service while maximising operational efficiency and financial performance. Key Responsibilities: Leadership & Operations Lead, motivate, and manage the team across Brasserie, Terrace, Conservatory Bar, and Spa Sitting Room.
Ensure high standards of service and operational excellence.
Plan and execute daily operations, maintaining consistency and efficiency.
Uphold health, safety, and hygiene compliance.
Guest Experience Provide a warm welcome and personal service to guests.
Handle guest feedback and complaints promptly with effective resolution.
Maintain VIP guest preparations and ensure exceptional dining experiences.
Team Development Recruit, train, and develop team members through effective performance reviews.
Maintain team morale, discipline, and high presentation standards.
Lead daily briefings, foster strong communication, and empower staff.
Financial Performance Drive revenues to meet targets and budgets through proactive sales strategies.
Control departmental costs, monitor payroll, and ensure accurate revenue processing.
Prepare reports and forecasts to improve performance.
Compliance & Standards Ensure all SOPs are followed and updated regularly.
Maintain service and sanitation standards across outlets.
Monitor beverage service in compliance with licensing laws.
Candidate Profile: Proven leadership in food and beverage management within a luxury or high-volume environment.
Strong communication, organisational, and problem-solving skills.
Excellent knowledge of F&B operations, guest service, and staff training.
Flexible, adaptable, and results-driven.
