About Eastway Brasserie
An East End brassiere in the heart of London’s business district, Eastway is the answer for those looking for a relaxed London dining experience. Open all day for refreshments and dining, Eastway Brasserie serves a selection of the chef’s favourites; with the grill section showcasing Eastway’s signature style. The restaurant stuns with an open kitchen, large windows overlooking Liverpool Street and cozy seating.
Duties and responsibilities related to the Head Chef role
As Head Chef, you will lead the culinary delivery of our all-day dining and drinking brasserie, Eastway.
- You will ensure flawless execution, creativity, and operational excellence while maintaining the highest Hyatt brand standards.
- Oversee planning and execution of all food production, ensuring consistency, quality and timely delivery.
- Lead, develop and inspire the kitchen brigade, creating clear structure, accountability and strong service leadership during peak operations.
- Drive food cost control, labour efficiency, and waste management in line with budgeted KPIs.
- Maintain exceptional food safety, hygiene and brand standards across all areas.
- Monitor guest feedback and operational performance, implementing improvements that enhance both experience and profitability.
About you
Proven experience as a Head Chef or Senior Sous Chef within premium hotel operations. A structured, hands-on leader with strong operational control, who can maintain exceptional culinary standards in a fast-paced environment.
