A leading NY sandwich shop is bringing its New York DNA to London with its first cart on City Road and were looking for a senior operator who still loves the floor. This is the early hire who sets the tone: sleeves rolled up for launch, then building a high-performing team and an operating playbook for multi-site growth. Youll work closely with the founder to land and scale the UK model. What youll do

Own the launch Site set-up, service standards, HACCP/EHO readiness Supplier onboarding, OS&E, and opening playbooks

Lead from the front Train, roster, and motivate a small team Step onto the grill, pass, or till when service demands it

Make it run like clockwork Stock control, COGS, waste, cash-up Daily P&L hygiene and simple operating dashboards

Be our guest champion Fast, friendly service with a fix-at-source mindset Turn first-timers into regulars

Build for scale Enforce and Follow SOP, recipe and systems Document SOPs and implement Coach future site leaders Feed real-world ops data into the UK rollout plan

What youll bring

Senior hospitality or food-to-go leadership experience (Head Chef, Kitchen Manager, GM, or similar) Background in street-food, fast-casual, or high-volume service A truly hands-on approach: happy to cook, serve, clean, and cash-up Proven experience with food safety, EHO inspections, and launch checklists (Level 3/4 preferred) Strong grasp of cost control (COGS, labour, GP) with practical reporting habits Start-up mindset: calm under pressure, solutions-oriented, clear communicator
