About Us
The Bowling Green is a traditional, family-friendly pub just off Chorlton Green. We are a high-volume site at the heart of the community, with strong afternoon and early evening trade, a well-established food offer, 6 letting rooms and a busy function business.
In warmer months our large childrens playground, 40+ outdoor tables and shipping-container bar make the venue extremely popular with families. Our Guinness is our best seller and our standards and reviews are consistently high.
Our previous General Manager was with us for over eight years and we are seeking an experienced, commercially minded leader to guide the pub into its next chapter.
The Role
You will lead the full daily operation of The Bowling Green, ensuring high standards, excellent guest experience and strong commercial performance across:
Bar and food operations
Outdoor trade during peak season
6 guest bedrooms
Wakes, celebrations and private events
Cellar management, food costings and beer quality
You will be accountable for people, product, profit and standards, working closely with the owners to deliver a stable, well-run and commercially successful business.
Key Responsibilities
Leadership and Team Development
Lead and develop a team of more than 30+ staff
Set clear expectations, manage performance and ensure consistent standards
Maintain a calm, organised and positive working environment
Operational Management
Run the bar, kitchen, rooms, outdoor areas and functions as a coordinated operation
Oversee busy enquiry inboxes, bookings, communications and guest issues
Maintain excellent cellar and line-cleaning routines to protect beer quality
Uphold high standards of cleanliness, safety and guest experience across all areas
Commercial Performance
Deliver tight cost control across wages, stock and utilities
Own stock management including ordering, stocktakes, variances and GP
Work with the owners on budgets, forecasts and P&L performance
Use trade trends to adjust staffing, stock and offerings to maximise revenue and profit
Annual turnover £1.5m (ex VAT)
Compliance and Safety
Ensure compliance with licensing, food safety, H&S and fire regulations
Maintain accurate records for inspections and audits
Lead risk management across all operational areas
Systems, Automation and Operational Efficiency
We want a General Manager who combines traditional pub craft with modern systems and technology. You will be expected to:
Introduce and optimise operational systems that improve consistency and reduce errors
Use digital tools and apps for stock management, waste control and ordering
Improve rostering accuracy through forecasting, footfall patterns and wage cost targets
Implement digital checklists for opening/closing routines, daily tasks and compliance logs
Strengthen communication systems so staff know priorities, standards and expectations
Use data insights and simple daily metrics to drive better decision making
Identify efficiency gains that support higher profitability without compromising guest experience
This is a role for someone who can run a high-volume pub with structure, systems and commercial discipline.
Non-Negotiable Requirements
Candidates must clearly meet all of the following. These criteria are essential and not flexible.
Minimum 15 years experience in pubs, bars, restaurants or hotels
Minimum 7 years in a management role with responsibility for people, standards and financial results
Based in Manchester and able to commute reliably to Chorlton
Strong experience managing costs, budgets and P&L
Holder of a personal licence
Relevant H&S qualifications suitable for a hospitality environment
Solid stock management experience including ordering, stocktakes and GP control
Working knowledge of risk management and fire regulations for licensed premises
Excel literate, capable of working with rotas, stock sheets and basic reports
Numerate, commercially astute and confident managing financial targets
