The Commis Duck Chef is responsible for preparing and serving Beijing Duck to a consistent high standard while maintaining hygiene, quality, and section efficiency. Prepare and produce Beijing Duck to a consistently high standard on a daily basis. Support the day-to-day operations of the Beijing Duck Section. Prepare all sauces, stocks, and mixtures required for daily service. Serve Beijing Duck to guests in line with service standards and procedures. Maintain high standards of food quality, presentation, and consistency. Ensure section cleanliness, correct temperature records, and food safety compliance. Assist with cost control, stock ordering, and waste minimisation. Carry out duties in line with kitchen SOPs and hotel policies. Assist other kitchen sections as required by the Head/Master Chef. Ensure all equipment and utensils are clean, safe, and properly maintained. Support team integration by welcoming and assisting new and agency staff. Required Skills Basic Beijing Duck preparation skills Good knife and butchery skills Strong food hygiene and safety awareness Ability to work under pressure Good teamwork and communication Attention to detail and consistency Willingness to learn and follow standards
