Senior Sous Chef Candidate Requirements: Proven ability to lead a kitchen section and ensure consistent, high-quality food execution across all services Strong knowledge of recipe specifications, prep systems, cooking methods, and portion standards, with the ability to train others to follow them Demonstrated commitment to presentation standards, kitchen discipline, and maintaining a clean, efficient working environment Confident user of BOH systems including Check 365, MarketMan, and other MJMK platforms, with the ability to support junior chefs in their use Skilled in accurate ordering, stock management, supplier communication, and invoice checks with minimal supervision Experience managing kitchen maintenance issues, escalating technical problems promptly, and ensuring equipment is safe and operational As Senior Sous Chef, ability to coach, onboard, and develop team members, including Demi, CDP, and Junior Sous levels Strong understanding of HR and performance procedures, including conduct management, welfare concerns, and supporting Head Chef with documentation when required Positive leadership style that sets the tone for the kitchen, supports morale, and acts as a role model in high-pressure services Ability to foster teamwork and culture, contributing directly to a productive and respectful working environment Excellent cost-control awareness (stock, labour, waste, GP) and ability to act on trends or variances Proven ability to track and communicate invoice discrepancies, manage supplier pricing issues, and maintain accurate BOH admin Thorough understanding of FIFO principles, food safety, allergen standards, and waste-minimisation practices Highly organised with strong task prioritisation, time management, and clear delegation skills Supports the Head Chef by flagging operational, staffing, or supplier concerns early, along with suggested solutions Confident in coaching senior team members, helping build their leadership capability, communication skills, and performance management confidence Able to step up and lead the kitchen in the Head Chefs absence, ensuring smooth service, strong communication, and operational continuity

Luso is the latest chapter from MJMK Restaurants a proud evolution that honours Lisboetas legacy while shaping a bold new future for the team and space. About MJMK Restaurants MJMK Restaurants own and operate a collection of award-winning restaurants. Founded in 2018 by lifelong friends Jake Kasumov and Marco Mendes, our journey began with Casa do Frango. In 2020, we partnered with chef patron Santiago Lastra to open KOL, a restaurant in Marylebone celebrating Mexican cuisine with British ingredients. KOL has since earned a Michelin Star and been named one of the Worlds 50 Best Restaurants.
In 2024 saw two new ventures: Fonda, a contemporary Mexican concept in Mayfair - our second collaboration with Santiago Lastra - and AngloThai in Marylebone, a debut restaurant from husband-and-wife John and Desiree Chantarasak, blending Thai flavours with British ingredients. Within three months of opening, AngloThai earned a Michelin star.
In the 2025 National Restaurant Awards, AngloThai was named The Square Opening of the Year and ranked 7th in the Top 100 list, followed by KOL at number 50. Luso, a contemporary Portuguese restaurant in Fitzrovia, opened in September 2025.
