We are seeking an experienced, highly organised, and passionate Sous Chef or Head Chef specialising in Sushi and Japanese cuisine to lead and inspire our kitchen operations in a High Profile contract site in The City. This is a unique opportunity for a talented culinary professional who thrives in both high-end hospitality and client-facing environments and wants a better work life balance with no weekends! You will oversee a core team of 6, managing hospitality events and intimate lunchs and fuctions, while delivering exceptional food experiences ranging from Bento and Udon to premium sushi offerings. This role also includes hosting interactive sushi masterclasses for clients and stakeholders. Key Responsibilities

Lead day-to-day kitchen operations, ensuring exceptional food quality, consistency, and presentation Oversee lunch and hospitality services, maintaining high standards under pressure Confidently run a main kitchen as well as cook in front of clients during live or private events Mentor, train, and develop kitchen staff, fostering a positive and collaborative team culture Design and deliver engaging sushi masterclasses for clients and stakeholders Develop innovative seasonal menus using fresh, locally sourced ingredients Manage stock control, ordering, and supplier relationships Monitor and reduce waste while optimising kitchen efficiency and cost control Ensure full compliance with food safety, hygiene, and health & safety standards Bring creativity and flair to menu execution and presentation About You

Proven experience as a Sous Chef or Head Chef in Japanese cuisine ideally in a Hospitality or Fine dining venue Strong expertise in sushi preparation (nigiri, sashimi, maki) as well as hot dishes (Bento, Udon, etc.) Experience leading and managing kitchen teams Highly organised with excellent time management and multitasking abilities Comfortable working in both back-of-house and client-facing environments Confident communicator, capable of delivering training and masterclasses Strong understanding of stock management, waste control, and kitchen financials Passion for innovation, quality ingredients, and continuous improvement What We Offer
