About Loudons Love running a busy kitchen but tired of late nights? Loudons is one of Edinburghs best-known brunch destinations, serving scratch-made food across two busy city-centre restaurants supported by a production kitchen and bakery. With over 140,000 guests served each year, this is a high-volume, well-organised operation
not a small café kitchen. Were looking for a hands-on Head Chef to help lead our kitchens, support our chefs, and maintain the structure and standards that keep service running smoothly every day.
About the Role The Head Chef works across three kitchens: Fountainbridge Service Kitchen Fountainbridge Production Kitchen & Bakery New Waverley Service Kitchen Each kitchen is run day-to-day by a Sous Chef, and the Head Chef supports them with leadership, organisation and training while maintaining consistent standards across all sites. Working closely with the Head of Food and company directors, the Head Chef contributes ideas for new dishes and supports the development and rollout of seasonal menus. Youll be trusted to run the kitchens properly
and expected to take responsibility when things dont go to plan.

working across the kitchens during prep and service On kitchen days, youll work alongside the team, leading service and maintaining standards.
Key Responsibilities Lead and support a team of around 15 chefs and bakers Mentor the Sous Chefs running each kitchen Maintain strong organisation across prep, production and service Ensure consistent food quality across all kitchens Manage rotas, staffing levels and labour costs Oversee ordering, stock control and supplier relationships Maintain HACCP systems and food safety standards Work closely with front-of-house teams to ensure smooth service Contribute ideas for new dishes and seasonal menu development Lead from the front during busy services
What Were Looking For An experienced Head Chef or strong Senior Sous ready to step up Confident running high-volume services Strong organisation and prep planning skills A leader who supports and develops their team Calm under pressure and comfortable making decisions during service Someone who takes pride in building well-organised kitchens A chef who leads from the front and works alongside the team during busy services. This role would suit a chef who enjoys developing people as much as developing dishes.
